A Fish-Shaped Peach Galette for Summer 🐟🍑
Because sometimes the best summer desserts are a little unexpected.
I came across a photo of a fish-shaped galette on Pinterest & had to try it. With stone fruit season in full swing and a Peaches & Cream Olipop in hand, it felt like the perfect afternoon project. I layered the peaches to mimic fish scales— starting from the tail and working up— & she came out golden, puffed, & just the right amount of charming.🥰
It’s simple, summery, & a little bit special. Best enjoyed with a breeze, a cold drink, & absolutely no rush. 🙂↔️
🥧 Fish-Shaped Peach Galette
Serves 4–6
Time: ~35 minutes
Inspired by: A Pinterest scroll, peak peaches, and a sheet of puff pastry
✨ Ingredients (3x batch):
4–5 ripe peaches, thinly sliced
½ cup brown sugar
1 tsp cinnamon
¼ tsp ground nutmeg
¼ tsp ground ginger
1 tbsp cornstarch
¼ tsp salt
1 tbsp lemon juice
1 tsp vanilla extract
1 egg, for egg wash
1 sheet puff pastry (thawed but still cold)
🧑🍳 Directions:
Preheat oven to 425°F. Line a baking sheet with parchment paper.
In a large bowl, toss 4–5 sliced peaches with ½ cup brown sugar, 1 tsp cinnamon, ¼ tsp nutmeg, ¼ tsp ginger, 1 tbsp cornstarch, ¼ tsp salt, 1 tbsp lemon juice, and 1 tsp vanilla extract. Let sit while you prep the pastry.
On a lightly floured surface, cut the puff pastry into a fish shape using a sharp paring knife. Don’t worry about perfection—it’s meant to feel whimsical.
Lightly score a border around the edge of the pastry to encourage puffing. Use the tip of your knife to add detail to the tail (a few slits or crosshatch lines work well).
Starting at the tail, layer the peaches in overlapping rows to resemble fish scales, using larger slices at the base and smaller ones toward the top.
Beat the egg, then use it to brush the border and tail for a golden finish.
Bake for 25 minutes, or until the pastry is golden, puffed, and crisp.
Let cool slightly, then slice and serve—ideally outside, with your favorite sparkling drink.
